Cobán Fátima comes from the Alta Verapaz department of Guatemala, whose coffee economy dates back to the mid-nineteenth century. At that time, a growing community of German immigrants founded coffee plantations throughout the cloudy, rainy region, laying the groundwork for Guatemala’s current star reputation as a producer of specialty coffees. This particular coffee comes from Finca Rosario de Fátima, owned by the Sterkel family, and was produced in concert with TG-LAB, a Guatemalan-owned and operated coffee laboratory dedicated to the principle of traceability in coffee. Based in Guatemala City, TG-LAB helps farmers throughout the country add value to their product by identifying where and how their highest quality coffees are produced. This coffee is a result of those efforts, with a rich dark chocolate aroma, sparkling acidity, and notes of macadamia nuts and citrus.
